Gluten-Free Chocolate Chip Peanut Butter Cookies // Recipe

Today I thought I'd share a quick recipe with you all.  I made these for the first time this week and let me just say that between my husband and I, they didn't last very long!  These cookies are so insanely good and yet so simple to make!  The best part?  They're impressively low in calories since there's absolutely no flour or butter whatsoever.  You can't go wrong with a recipe like this. :-)

If you'd like to make these scrumptious, simplistic cookies, here's the recipe:
▫ 1 large egg
▫ 1/2 cup packed brown sugar
▫ 1 cup peanut butter (I used crunchy for added texture)
▫ 1 tsp baking soda
▫ 1 cup dark chocolate chips (or milk chocolate if preferred)
▫ Pinch of salt (optional)

▫ Preheat oven to 350 degrees.
▫ Mix egg, sugar, and baking soda in a bowl (be sure that there are no clumps of sugar remaining).
▫ Stir in peanut butter until thoroughly combined.
▫ Fold in chocolate chips.
▫ Scoop a tablespoon of cookie batter onto greased cookie sheet and place each cookie about 2 inches apart. Place cookie sheet in oven and cook for 10 minutes until cookie edges start to turn a golden brown. Don't overcook! The cookies may appear soft but will harden after cooling.

Note: don't be alarmed if the cookie dough looks like a large lump of peanut butter after all ingredients are combined. They will bake just fine. 😊

Pregnancy Update // 30 Weeks

How far along?  30 weeks!
Total weight gain:  22 pounds.  It definitely feels strange going up in weight every week, but it's reassuring to know that Baby Faulkner is growing at a healthy pace.
Stretch marks?  No stretch marks yet!
Sleep:  Sleeping has remained to be difficult due to my enlarging baby bump.  But thankfully, I'm not one of those women who have difficulties sleeping through the baby kicking all night.  Her little movements don't hinder my sleep at all. :-)
Best moment this week:  Adding the finishing touches to the nursery, and watching my baby girl's endless movements. <3
Miss anything?  My energy.  The third trimester is very exhausting.
Symptoms:  Absent-mindedness, heartburn, bleeding gums, back pain, shortness of breath, itchiness, occasional nausea & headaches, and exhaustion from standing up for long bouts of time.
Movement:  ALL the time.
Food cravings:  Mandarin oranges.
Anything making you queasy or sick?  Nothing in particular, but I have experienced the occasional nausea throughout this trimester.
Looking forward to:  The baby showers generously being held for Baby Faulkner next month. :-)
 I pray 2016 is off to a great start for ya'll!
